Gluten free, brown rice breading, shnitzel, finger food, great for kids

Prep time: 15 minutes, Frying time: 15 minutes


1.5-2 lb organic chicken breast (I get mine at Trader Joe’s)

1 C brown rice flour

1/2 C to 3/4 C filtered water

1 tsp paprika

3/4 tsp sea salt

1/2 tsp ground black pepper

1 tsp garlic powder

3 tbsp coconut oil



1. Mix flour and seasoning in a bowl

2. Add 1/2 C to 3/4 C filtered water to mixture, until it becomes a pasty consistency and set aside

3. Wash and cup up chicken breast into desired pieces

4. Place chicken into mixture and mix so that all pieces are coated

5. Heat coconut oil in non-stick pan

6. Add coated chicken pieces, and fry until nicely browned on both sides

Delicious straight from the pan, but also freezes well for a rainy day!
