Crisp and delicious, cucumber, red cabbage, salad, veganaise dressing, gluten freeGluten free crisp, delicious, cucumber red cabbage salad

 

Prep time: 10 – 15 minutes to check cabbage, 5 – 10 minutes to chop and garnish

Ingredients:

1 organic purple head of cabbage (the purple hue come from anthocyanins, phytochemicals that protect against carcinogens and may help prevent heart disease.)

2-3 organic cucumbers (cucumbers contain potassium, vitamin C and folic acid. The skin contains silica, potassium, magnesium and molybdenum.  Cucumbers also contain caffeic acid, which prevents water retention, making them great as a topical skin healer as well)

1 tablespoon of sesame seeds (nutritious, delicious, and high in calcium!)

2 tbsp of Veganaise

1/4 cup olive oil or grapeseed oil

1 tsp sesame oil

1 tbsp tamari

1 tsp finely minced garlic

1/2 tsp powdered ginger

 

 

1. Check cabbage thoroughly and chop

2. Chop cucumbers with or without the peel (if organic, definitely leave the peel on, as it is more nutritious)

3. Wisk all wet ingredients with garlic and ginger, and toss wisked dressing into chopped salad

4. Sprinkle with sesame seeds
