Delicious gluten free, dairy free, egg free, chocolate glazed doughnuts

I made these for a Hanukkah party last night, and they were a huge hit!

My guests left feeling satisfied without the “uch I ate junk” feeling, and I felt like a mensch.

Prep time: 10 minutes.  Baking time: 35 – 40 minutes

 

Add to food processor:

2 ripe bananas
3 tbsp honey
3/4 cups coconut milk
1/4 cup coconut oil (liquified)
1/2 tsp sea salt
1/4 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
2 tbsp psyllium husk powder
1/2 cup coconut flour
blend.
Line a cookie sheet with unbleached parchment paper.
Roll into one inch balls and place about one inch apart.
Bake at 375 degrees for about 35 minutes.
While they bake, mix up the chocolate glaze:
1/4 cup coconut cream (Put a can of coconut milk into the fridge.  Once cool, scoop out the creamy top –  coconut cream!)
2 tbsp cocoa powder
2 tbsp honey.
Whisk together and whalla! yummy chocolate glaze.

Once doughnuts are done, pour the glaze over them and eat them up!  Great warm or cooled.

  1. I’ve never heard of psyllium husk powder…….

    love that they are grain-free! We’re trying a paleo diet at the moment….well, not too strict, but have really cut out the dairy and most of the grains, would say it’s roughly 90/10 paleo.

    Keep up the great recipes….looks yummy!

    1. Psyllium husk can be bought in the bulk section of most health food stores and it’s cheap!
      It adds more “fluff” to the doughnuts, and is a good way to add healthy fiber.
      90/10 is pretty impressive, Erik!
