  1. 2 cups blanched almond flour
  2. 1/4 cup raw honey
  3. 1 cup grated zucchini (squeeze out excess water)
  4. 2 large eggs
  5. 1/4 cup Coconut Oil liquified or grapeseed oil
  6. 1/4 teaspoon sea salt
  7. 1/2 teaspoon baking soda
  8. 1 teaspoon ground cinnamon
  1. Pre-heat oven to 350 degrees
  2. Grease two mini loaf pans with coconut oil or grapeseed oil
  3. In a large bowl, combine almond flour, salt, baking soda, and cinnamon
  4. In a separate, small bowl, whisk together the eggs with oil and honey
  5. Pour wet ingredients into dry ingredients.
  6. Mix with a spoon until thoroughly combined.
  7. Fold in zucchini and scoop the batter into the loaf pans.
  8. Bake for approximately 1 hour until top is a nice golden brown.
  9. Allow the cake to cool 1 hr before serving.
  1. Dribble some honey on top and enjoy!
