Stovetop to Oven Apple Berry CobblerThis is a family favorite.  My family loves it warmed up, and preferably with a scoop of homemade berry ice-cream.

Prep Time:  25 minutes

Ingredients & Directions

Cobbler:

1 tbsp coconut oil

4 medium sized apples, diced into 1/2 inch cubes

2 cups berries (I love to use cranberries, blueberries and/or cherries) Fresh or frozen

2 tbsp freshly squeezed lemon juice

2 tbsp raw honey

pinch of salt

1 tsp freshly grated ginger (optional, but gives a zing that I love!)

1 tsp ground cinnamon

1/2 tbsp coconut flour

Directions:

1. Heat up oil in oven-safe skillet (also okay to heat up oil in standard skillet and then transfer after cooking into baking dish) and let apples cook down in skillet for about 10 minutes.  2. Stir in remainder of ingredients and then stir in coconut flour just before turning of burner.

Topping:

2 tbsp almond flour

1/4 cup coconut flour

1 teaspoon cinnamon

pinch of salt

2 tbsp coconut oil

1 egg, beaten

1 tbsp raw honey

3 tbsp coconut milk (or other milk of choice)

Directions:

Heat oven to 350 degrees Fahrenheit.

1. Mix wet ingredients together in small bowl.  2. Mix dry ingredients into wet ingredients. 3. Crumble on top of fruit reduction and bake uncovered for 10 minutes or until beautiful and golden brown on top.
