Delicious, Nutritious Chocolate Covered Strawberries

There is a synergistic benefit to eating berries and coconut fat.  They offer a perfect combination of water-soluble vitamins (strawberries are higher in Vitamin C than oranges, and lower on the glycemic index) and fat-soluble vitamins and minerals (coconut oil is linked with many healthy benefits, I will be writing a post just on that topic soon).

This dish is gorgeous, delicious and so healthy, it is a good idea to eat it as often as you can.  Also, it is super easy to make.

Ingredients:

Strawberries (as many as your heart desires.  The fudge can easly cover two to three pints)

For Fudge:

1 cup organic virgin coconut oil

1 cup organic cocoa

1/4 cup raw honey

1/2 cup raw almond butter  (other nut butters work great too)

Directions:

Place fudge ingredients in a food processor and blend until creamy.

Cut and wash strawberries and dry.  Now, the fun part: drench in fudge.  Place on serving platter and then place in fridge.  Fudge hardens in minutes in fridge.  I am officially recommending you eat at least one to two daily.  OK, now it is doctor prescribed, go ahead and make some!
